Who am I kidding? Veggie Beef soup is perfect ANY day as far as I'm concerned. It's always been a favorite in our family. I think it's the most versatile recipe in the world. You cannot mess it up. You simply need to cater it towards the foods you like, and make it your own. As I said in the video--the recipe is very forgiving. It's actually more of a method than a proper recipe, even though I wrote one out and listed it at the bottom of the page. My point is this: use things you and your family like and you can't go wrong. That goes for meat as well as the vegetables. If you want to use a good Italian sausage, the do it. It would be awesome! I mentioned you can use chicken and I'm sure it would turn out just fine---I just tend to like this soup with beef. You can also play with the seasoning. If you don't want to use a soup mix packet, then don't. Add your own garlic, cumin, parsley, thyme, etc...Heck, throw in some mushrooms!! Make it the way you like it! Just don't forget the cornbread. I absolutely love to crumble my cornbread into my soup. It's one of my favorite things ever!
