Southern Style Cheese Straws

The holidays have commenced and I am sooooooooooo glad because I love the hustle and bustle, the sights and sounds, and most of all: the FOOD! It seems like everyone has some favorite tid-bit that they associate with their memories of past Christmases and with good reason!! There are certain foods we don't go out of our way to make at any other time of the year, but come holiday time, SHAZAAM!! It's time to pull out the recipe and get to work! One of my favorites is CHEESE STRAWS!! Why in the world do I not make these lovelies at any other time of the year?? It's absolutely nuts!! Cheese straws are the perfect snacking food to tide you over as your graze from meal to meal! LOL They are crunchy, cheesy, buttery, and with just enough cayenne pepper to give them a nice "glow." Making them yourself gives you the ability to govern the heat level, which is good. I like mine with a kick. Moma can't handle the the heat so I make hers with ZERO cayenne. Brad likes his to to have a nice warm feeling in the back of his throat, while my Dad enjoys the ones that will burn the hair off your head! Different strokes for different folks, eh?

Not only can you determine the heat level, you can also add all kinds of yummy "extras" like sesame seeds, pepper corns, crushed up nuts, herbs and yes---even more cheese!!!!!!! I say, bring it on!

Another wonderful thing about cheese straws is the fact that you can make up a great big batch, and keep it in the refrigerator for a week or so, using it as you need it. They store well after they are baked, too--you just have to make sure they are in an air-tight container or bag. They are a welcome addition to any appetizer table, hostess gift basket, Uncle Roscoe's stocking, and hundreds of other applications so lets all try to do better by making cheese straws during this coming holiday season, as well as beyond! Cheese straws at a baseball game?? Brilliant idea!!!!!!! I'm on it!
